Crispy Cheesy Potato Stacks
These crispy, golden potato stacks are buttery on the inside, crunchy on the edges, and topped with melted cheese—perfect as a side dish or appetizer.
Ingredients
- 4 medium potatoes, thinly sliced
- 2 tablespoons melted butter
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme or rosemary
- Salt and black pepper, to taste
- 1 cup shredded cheddar or Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, toss the potato slices with melted butter, olive oil, garlic powder, paprika, thyme, salt, and pepper until evenly coated.
- Stack the potato slices into the muffin cups, filling each one slightly above the rim.
- Bake for 40–45 minutes, or until the potatoes are tender and the edges are crispy.
- Sprinkle cheese over each stack and bake for an additional 5–10 minutes, until the cheese is melted and lightly golden.
- Let the stacks cool for a few minutes, then carefully remove them from the muffin tin.
- Garnish with fresh parsley and serve warm.

- For extra crispiness, use starchy potatoes such as russets.
- Add cooked bacon bits, caramelized onions, or chopped fresh herbs between the layers for more flavor.
