Crispy Cheesy Potato Stacks

These crispy, golden potato stacks are buttery on the inside, crunchy on the edges, and topped with melted cheese—perfect as a side dish or appetizer.

Ingredients

  • 4 medium potatoes, thinly sliced
  • 2 tablespoons melted butter
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme or rosemary
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar or Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. In a large bowl, toss the potato slices with melted butter, olive oil, garlic powder, paprika, thyme, salt, and pepper until evenly coated.
  3. Stack the potato slices into the muffin cups, filling each one slightly above the rim.
  4. Bake for 40–45 minutes, or until the potatoes are tender and the edges are crispy.
  5. Sprinkle cheese over each stack and bake for an additional 5–10 minutes, until the cheese is melted and lightly golden.
  6. Let the stacks cool for a few minutes, then carefully remove them from the muffin tin.
  7. Garnish with fresh parsley and serve warm.

Tips

  • For extra crispiness, use starchy potatoes such as russets.
  • Add cooked bacon bits, caramelized onions, or chopped fresh herbs between the layers for more flavor.
  • Serve with sour cream, ranch dressing, or a garlic aioli for dipping.
