3-Ingredient Slow Cooker Pork Ribs
This recipe is perfect when you want tender, flavorful ribs with minimal effort. The slow cooker does most of the work, and the meat comes out juicy and nearly falling off the bone.
Prep Time
- Preparation: 10 minutes
- Cooking: 7–8 hours on LOW (or 4–5 hours on HIGH)
- Servings: 4–6
Ingredients
- 1 rack pork ribs (about 2–3 lb / 1–1.5 kg)
- 1 cup barbecue sauce
- ¼ cup brown sugar
- 2 teaspoons garlic powder
Note: Salt and black pepper are optional. Since they’re common seasonings rather than core ingredients, many recipes still call this a “3-ingredient” recipe.
Instructions
Step 1: Prepare the ribs
- Remove the thin membrane from the back of the ribs (if it’s still attached). This helps the seasoning penetrate and makes the ribs more tender.
- Pat the ribs dry with paper towels.
- Season lightly with salt and black pepper if desired.
Step 2: Fold the ribs
- Fold or curl the rack into a circle so it fits inside the slow cooker.
- Stand it upright along the sides of the slow cooker or coil it in the bottom.
Step 3: Make the sauce
In a small bowl, combine:
- 1 cup barbecue sauce
- ¼ cup brown sugar
- 2 teaspoons garlic powder
Stir until the sugar is dissolved.
Step 4: Coat the ribs
Pour the sauce over the ribs, making sure all sides are coated.
Step 5: Slow cook
- LOW: 7–8 hours (best for the most tender ribs)
- HIGH: 4–5 hours
The ribs are ready when the meat is very tender and easily pulls away from the bone.
Optional finishing step
For a sticky, caramelized crust:
- Carefully transfer the cooked ribs to a baking tray.
- Brush with extra barbecue sauce.
- Broil (grill) for 3–5 minutes until the sauce bubbles and lightly caramelizes.
Watch closely to prevent burning.
Serving suggestions
These ribs pair well with:
- Coleslaw
- Mashed potatoes
- Corn on the cob
- Baked beans
- Macaroni and cheese
- Garlic bread
- Roasted vegetables
- Rice
Variations
Instead of brown sugar and garlic powder, you can try:
- Honey + barbecue sauce + garlic powder for a sweeter glaze.
- Barbecue sauce + soy sauce + honey for a sweet-savory flavor.
- Barbecue sauce + apple juice + garlic powder for a fruity, tender finish.
- Barbecue sauce + cola + onion soup mix for a classic slow-cooker version.
Storage
- Refrigerator: Store leftovers in an airtight container for up to 4 days.
- Freezer: Freeze for up to 3 months. Thaw overnight in the refrigerator before reheating.
Tips for the best ribs
- Cooking on LOW produces the most tender texture.
- Remove the membrane before cooking if possible.
- Don’t overfill the slow cooker; the ribs should fit comfortably.
- Broiling at the end adds color and a slightly crisp exterior.
- Let the ribs rest for about 5 minutes before serving to help the juices redistribute.
These slow cooker ribs are an easy, flavorful meal that requires very little hands-on time while producing tender, juicy results.
