Instructions
Step 1: Prepare the Crust
- Preheat your oven to 325°F (163°C).
- Grease a 9-inch springform pan and line the bottom with parchment paper if desired.
- Mix the graham cracker crumbs, melted butter, and sugar until evenly combined.
- Press the mixture firmly into the bottom of the pan.
- Bake for 8–10 minutes, then remove and let cool.
Step 2: Make the Raspberry Sauce
- In a small saucepan, combine the raspberries, sugar, and lemon juice.

Step 3: Prepare the Cheesecake Filling
- Beat the softened cream cheese until smooth and creamy.
- Gradually add the sugar and mix until fully incorporated.
- Beat in the vanilla extract.
- Add the eggs one at a time, mixing on low speed after each addition.
- Fold in the sour cream and flour just until combined. Avoid overmixing.
Step 4: Assemble
- Pour the cheesecake batter over the cooled crust.
- Spoon small dollops of the raspberry sauce over the top.
- Use a butter knife or skewer to gently swirl the raspberry sauce through the batter to create a marbled effect.
Step 5: Bake
- Place the cheesecake on the center rack of the oven.
