Bean and Ham Hock Soup

Bean and Ham Hock Soup is a classic comfort food made with smoked ham hocks, dried beans, vegetables, herbs, and broth. The ham hocks slowly simmer for several hours, releasing rich flavor and tender meat into the soup, while the beans become creamy and absorb the smoky taste.

This soup is economical, nutritious, and even better the next day as the flavors continue to develop.

Ingredients

For the Soup

  • 1 large onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika (optional)
  • 1 teaspoon Worcestershire sauce (optional)

Toward the End

  • Salt, to taste (add only after the ham is cooked, as ham hocks are naturally salty)
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon lemon juice or apple cider vinegar (optional, to brighten the flavor)

Optional Additions

For extra flavor or texture, you can add:

  • 2 diced potatoes
  • 1 cup chopped cabbage
  • 1 cup corn
  • 1 can diced tomatoes
  • Fresh spinach or kale
  • Red pepper flakes for a little heat

Step 1: Prepare the Beans

Overnight Soak (Recommended)

  1. Rinse the dried beans thoroughly.
  2. Remove any small stones or damaged beans.
  3. Cover with plenty of cold water.
  4. Soak overnight (8–12 hours).
  5. Drain and rinse before cooking.

Quick Soak Method

  1. Place beans in a pot.
  2. Cover with water.
  3. Bring to a boil for 2 minutes.
  4. Remove from heat.
  5. Let stand for 1 hour.
  6. Drain and rinse.

Soaking helps the beans cook more evenly and may reduce digestive discomfort.


Step 2: Cook the Vegetables

In a large soup pot or Dutch oven:

  1. Heat the olive oil or butter over medium heat.
  2. Add the onion, carrots, and celery.
  3. Cook for about 5–7 minutes until softened.
  4. Add the garlic and cook for another minute.

This creates a flavorful base for the soup.


Step 3: Add the Ham Hocks

Place the ham hocks into the pot.

Add:

  • Soaked beans
  • Chicken broth or water
  • Bay leaves
  • Thyme
  • Black pepper
  • Smoked paprika (if using)

Bring the soup to a gentle boil.


Step 4: Simmer Slowly

Reduce the heat to low.

Cover partially with a lid and simmer gently for 2½–3 hours, or until:

  • The beans are tender.
  • The meat easily falls off the bone.

Avoid boiling vigorously, as gentle simmering keeps the meat tender and the broth clear.


Step 5: Remove the Ham Hocks

Carefully lift the ham hocks out of the soup.

Allow them to cool for a few minutes.

Then:

  • Remove the skin.
  • Discard excess fat.
  • Pull the meat from the bones.
  • Chop or shred the meat into bite-sized pieces.
  • Discard the bones and any gristle.

Return the meat to the soup.


Step 6: Finish the Soup

Remove the bay leaves.

Taste the soup.

Add:

  • Salt (only if needed)
  • Extra black pepper
  • Fresh parsley
  • Lemon juice or apple cider vinegar, if desired

The small amount of acid can brighten the rich, smoky flavors.


Optional: Make It Creamier

If you prefer a thicker soup:

Option 1

Mash about 1–2 cups of the cooked beans against the side of the pot and stir them back in.

Option 2

Blend 2 cups of the soup with an immersion blender or countertop blender, then return it to the pot.

This creates a naturally creamy texture without adding dairy.


Slow Cooker Method

  1. Add all ingredients except parsley and salt to the slow cooker.
  2. Cook:
    • Low: 8–10 hours
    • High: 5–6 hours
  3. Remove the ham hocks.
  4. Shred the meat.
  5. Return the meat to the soup.
  6. Add parsley and season to taste.

Pressure Cooker / Instant Pot Method

  1. Sauté the vegetables using the Sauté function.
