Ingredients

  • 2½ pounds baby potatoes or Yukon Gold potatoes, washed and cut into chunks
  • 1 large yellow onion, sliced
  • 3 tablespoons butter, melted
  • 1 packet dry onion soup mix
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • 2 tablespoons chopped fresh parsley (optional)
  • ¼ cup shredded Parmesan cheese (optional)

Instructions

1. Prepare the Potatoes

Wash the potatoes thoroughly. Cut larger potatoes into evenly sized pieces so they cook at the same rate.

2. Combine Ingredients

Place the potatoes and sliced onions in the crock pot.

In a small bowl, mix the melted butter, onion soup mix, garlic powder, black pepper, and paprika.

Pour the seasoned butter mixture over the potatoes and onions. Toss until everything is evenly coated.

3. Slow Cook

Cover and cook until the potatoes are fork-tender:

  • LOW: 5–6 hours
  • HIGH: 2½–3 hours

Stir once or twice during cooking if convenient, but avoid opening the lid too often because it slows cooking.

4. Finish and Serve

When the potatoes are tender, sprinkle with fresh parsley and Parmesan cheese if desired.

Serve warm.

Tips for Perfect Crock Pot Potatoes

  • Yukon Gold potatoes hold their shape well and become naturally creamy.
  • Cut potatoes into similar sizes for even cooking.
  • Avoid adding too much liquid; potatoes release moisture as they cook.
  • For crisp edges, transfer cooked potatoes to a baking sheet and broil for a few minutes before serving.
