No-Bake Banana Split Cake

No-Bake Banana Split Cake

This No-Bake Banana Split Cake is a creamy, fruity dessert inspired by the classic banana split. It features a buttery graham cracker crust, a rich cream cheese filling, fresh bananas and pineapple, whipped topping, and colorful garnishes. Since it doesn’t require baking, it’s perfect for warm weather, parties, or whenever you need an easy make-ahead dessert.

Ingredients

For the Crust

  • 2 cups graham cracker crumbs
  • ½ cup (115 g) unsalted butter, melted
  • ¼ cup granulated sugar

For the Filling

  • 2 packages (8 oz/225 g each) cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Fruit Layer

  • 3–4 ripe bananas, sliced
  • 1 can (20 oz/565 g) crushed pineapple, well drained

Topping

  • 1 container (8 oz/225 g) whipped topping, thawed (or about 3 cups freshly whipped cream)
  • ½ cup chopped walnuts or pecans (optional)
  • Maraschino cherries
  • Chocolate syrup
  • Colorful sprinkles (optional)

Instructions

Step 1: Make the Crust

  1. Combine the graham cracker crumbs, melted butter, and sugar.
  2. Press the mixture firmly into the bottom of a 9×13-inch (23×33 cm) baking dish.
  3. Refrigerate for 15–20 minutes to firm up.

Step 2: Prepare the Cream Cheese Layer

  1. Beat the softened cream cheese and butter until smooth and fluffy.
  2. Gradually mix in the powdered sugar.
  3. Add the vanilla extract and beat until well combined.
  4. Spread the mixture evenly over the chilled crust.

Step 3: Add the Fruit

  1. Arrange the sliced bananas over the cream cheese layer.
  2. Spread the well-drained crushed pineapple evenly over the bananas.

Tip: Drain the pineapple thoroughly to prevent the dessert from becoming watery.

Step 4: Add the Topping

  1. Spread the whipped topping evenly over the pineapple layer.
  2. Sprinkle with chopped nuts, if using.
  3. Drizzle with chocolate syrup.
  4. Garnish with maraschino cherries and sprinkles.

Step 5: Chill

  • Refrigerate for at least 4 hours, preferably overnight, before serving.
  • Slice into squares and serve chilled.

Tips for Success

  • Use ripe but firm bananas to help them hold their shape.
  • To slow browning, lightly brush banana slices with lemon or pineapple juice before layering.
  • Chill overnight for the best texture and flavor.
  • Keep leftovers refrigerated and enjoy within 2–3 days, as the bananas will gradually soften and brown.

Optional Variations

  • Add sliced strawberries between the banana and pineapple layers.
  • Drizzle with caramel sauce as well as chocolate syrup.
  • Use crushed vanilla wafers instead of graham crackers for the crust.
  • Sprinkle toasted coconut on top for extra flavor.
