Chicken Cacciatore means “hunter-style chicken” in Italian. It is a comforting dish made with chicken slowly cooked in a rich sauce of tomatoes, onions, garlic, herbs, and vegetables. The long simmer makes the chicken tender and full of flavor.
Ingredients (Serves 4–6)
Chicken:
- 1 whole chicken cut into pieces (or 6–8 chicken thighs/drumsticks)
- 1½ teaspoons salt
- 1 teaspoon black pepper
- ½ cup flour (optional, for light coating)
- 3 tablespoons olive oil
Sauce:
- 1 large onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 250 g mushrooms, sliced (optional but traditional in many versions)
- 4 cloves garlic, minced
- 1 cup dry white wine (optional)
- 1 can (800 g) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 2 bay leaves
- ½ teaspoon chili flakes (optional)
- ½ cup chicken broth
- Fresh basil or parsley for finishing
Step-by-Step Recipe
1. Prepare the Chicken
- Pat chicken pieces dry with paper towels.
- Season with salt and pepper.
- Lightly coat with flour if using.
The flour helps create a slightly thicker, richer sauce.
2. Brown the Chicken
- Heat olive oil in a large pot or deep pan.
- Add chicken pieces skin-side down.
- Cook until golden brown, about 5–7 minutes per side.
- Remove chicken and set aside.
Don’t worry about cooking it fully yet — it will finish in the sauce.
3. Cook the Vegetables
In the same pan:

5. Simmer the Chicken
- Return chicken to the sauce.

6. Finish and Serve
Remove bay leaves.
