Salisbury Steak with Mushroom Gravy

Salisbury Steak with Mushroom Gravy is a classic, savory comfort food featuring seasoned ground beef patties seared to golden perfection and simmered in a rich, deeply flavorful onion and mushroom brown gravy.

Ingredients

  • Beef Patties:
    • 1.5 lbs lean ground beef (80/20 or 85/15)
    • 1/2 cup panko breadcrumbs
    • 1 large egg
    • 1 tbsp Worcestershire sauce
    • 1 tsp Dijon mustard
    • 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp salt, and 1/4 tsp black pepper
  • Mushroom Gravy:
    • 8 oz cremini or button mushrooms, sliced
    • 1 small yellow onion, thinly sliced
    • 2 tbsp unsalted butter & 1 tbsp olive oil
    • 2 tbsp all-purpose flour
    • 2 cups beef broth
    • 1 tbsp Worcestershire sauce & 1 tsp Dijon mustard
    • Salt and pepper to taste
1.Form and Sear Patties:Locks in moisture and flavor.

In a bowl, gently combine all beef patty ingredients until just mixed. Shape into 4 oval-shaped patties. Heat olive oil in a large skillet over medium-high heat. Sear patties for 3–4 minutes per side until browned, then transfer to a plate (they will finish cooking in the gravy).
2.Sauté Mushrooms and Onions:Builds deep savory base.

Melt butter in the same skillet over medium heat. Add sliced mushrooms and onions, cooking for 6–8 minutes until soft, sweet, and deeply browned.
3.Make the Roux:Thickens the gravy base.

Sprinkle the flour over the mushrooms and onions. Cook, stirring constantly, for 1–2 minutes to brown the flour and remove any raw starch taste.
4.Simmer the Gravy:Creates a smooth, velvety sauce.

Gradually whisk in the beef broth, Worcestershire sauce, and Dijon mustard, scraping up any browned bits (fond) from the skillet bottom. Bring to a simmer until the gravy begins to thicken slightly.
5.Return Patties & Finish Cooking:Simmer for 8–10 minutes.

Nestle the patties back into the simmering mushroom gravy. Reduce heat to medium-low, cover, and simmer for 8–10 minutes until patties are fully cooked through (160°F internal temperature) and tender. Spoon gravy over patties before serving.

Pro-Tips for Success

  • Don’t Overwork the Meat: Mix patty ingredients until just combined so the steaks stay tender rather than dense or tough.
  • Mushroom Variety: Using cremini (baby bella) mushrooms adds a richer, woodsy depth than plain white button mushrooms.
